"This is tightly knit and racy, with a spicy underpinning and a clean-cut mix of poached pear, grated ginger and pink grapefruit zest. An aperitif style, showing a crisp, lacy finish. Drink now."

Maison Veuve Clicquot - Luxury Champagne|Louis Vuitton Moët Hennessy Group
Maison Veuve Clicquot is a French Champagne house based in Reims, specializing in premium Champagnes. The winery was founded in 1772 by Philippe Clicquot and is one of the largest champagne houses in the world. Madame Clicquot get the passion and knowledge of champagne creation from his husband. Before the invention of Disgorging by Madame Clicquot in 1816, Champagne was cloudy. The lees removal process is called dégorgement in French, traditionally a skilled manual process where the beer cap and lees are removed without losing much of the liquid, and a varying amount of extra-sugar added. Nowadays, Modern automated disgorgement is done by freezing a small amount of the liquid in the neck and removing this plug of ice containing the lees by Gyro-Palette machine. Also, Madame Clicquot created the first known vintage Champagne in 1810, invented the riddling table process to clarify champagne in 1816 In 1818, and invented the first known blended rosé champagne by blending still red and white champagne wines. All methods are still used today by the majority of champagne producers.

In that era when women were excluded from the business world, she dared to assume the head of the company, a role she undertook with passion and determination. Madame Clicquot’s character might be summarized with two words "audacious and intelligent".
